I’m often asked for recommendations on which wine to pair with which dish. While the seemingly infinite number of matches can feel overwhelming, a few simple guidelines can simplify the process.

First and foremost, prioritize personal preference. Drink what you like and eat what you like. It won’t be an ideal pairing unless you enjoy both the food and the wine. Beyond that, the two main considerations are weight and intensity. Light dishes pair best with lighter wines and richer, full-bodied wines are most suited to heavier meals. If one side outweighs the other, neither will shine.

The same is true for the intensity of flavour. Vibrantly flavourful recipes call for wines with expressive aromatics and significant depth of flavour while more subtle plates are best enjoyed with more nuanced, delicate wines.
