A beautifully presented 6-course tasting menu focused on regional Italian and seasonal Canadian ingredients

Franco Stalteri and Donato Carozza are the founders of Charlie's Burgers and the Charlie's Burgers Wine Program, which offers its members exclusive access to rare, hard-to-find wines from around the world, as well as other dining benefits at select Toronto restaurants, including many MICHELIN locations. The wine pairings for this evening was cherry-picked by Franco and Donato, and offers a glimpse into their thoughtfully selected program.

Shayne Herbert, lead mixologist at Azura, won the 2024 MICHELIN Guide Exceptional Cocktails Award. He’s known for innovative drinks that incorporate unique ingredients like olive oil and dill, as well as custom off-menu creations tailored to complement the restaurant’s tasting menu. Sustainability plays a big role in his approach, as he repurposes ingredients from the kitchen into cocktails. Herbert’s ability to blend flavor with eco-friendly practices has earned him much-deserved recognition in the Toronto culinary scene.
