On October 16th, you are invited to celebrate the legacy of one of the city’s most storied restaurants. Splendido, once hailed as the pinnacle of fine dining in Toronto, was where chef Victor Barry and restaurateur Yannick Bigourdan built their reputations as a visionary duo. 

Though Splendido restaurant has since closed, its influence endures — shaping Toronto’s culinary culture for over a decade. For La Collab No. 14, Barry, now the creative force behind Piano Piano, and Bigourdan, one of Toronto’s most respected hospitality leaders (Lucie, Carbon Bar, The Berczy Tavern, Amano Trattoria, and more), reunite alongside Michelin-recognized Chef Arnaud Bloquel of Restaurant Lucie. Together, they present a blind multi-course tasting menu with exceptional wine pairings — a one-night only dining experience that honors Splendido’s legacy while looking boldly to the future.

Meet the Chefs:

Victor Barry, Splendido, Piano Piano

Victor is a born and bred Ontario chef. His work ethic, passed down from his father, has driven him to his position as one of Toronto’s premier chefs. He has honed his culinary skills around the world and has made an indelible mark on Toronto’s restaurant landscape.    

As Chef-Owner of Piano Piano Restaurant, Victor is once again forging new ground on the culinary scene. While he remains focused on finding the magic inherent in every single ingredient; he is allowing himself and his guests a chance to slow down and savour experiences that come with great food, great wine, and each other.

Victor’s desire to give his guests a singular culinary experience in Toronto will never change, though the way he does that has. At Piano Piano Restaurant, Victor and his family welcome you to their ideal Italian restaurant, where your hunger is sated and soul is nourished.

Yannick Bigourdan, Owner & Restaurateur, Restaurant Lucie

Born in the South of France to a family rooted in culinary tradition, Yannick carried forward a legacy that began in the late 1800s with his great-grandfather’s artisanal delicacies and continued through generations of celebrated chefs. After studies across Europe, including training at Ireland’s Dromoland Castle, he pursued Hotel and Food & Beverage Management at the Swiss Hotel School of Lausanne, graduating with honors. His career took flight with Four Seasons Hotels & Resorts, first in Los Angeles and later in Toronto, where he advanced to Director of Restaurants and Bar.

In 2001, Yannick acquired Splendido, which earned accolades including Toronto Life’s Best Restaurant and Wine Access’ Top Canadian Restaurant. He went on to create Nota Bene, named Best New Restaurant by both Toronto Life and enRoute. His ventures have since included The Carbon Bar, Union Chicken, Amano Trattoria, and most recently Lucie—a fine dining tribute to his grandmother. In 2023, he also launched The Social Catering & Co., securing partnerships with Toronto’s most prestigious institutions.

In recognition, Yannick received the Ontario Hostelry Institute’s Gold Award for Independent Restaurateur.

Chef Arnaud Bloquel, Restaurant Lucie

Born in Guadeloupe, Chef Arnaud Bloquel's culinary journey blends rich cultural influences with the precision of Michelin-starred French kitchens. After gaining acclaim for his restaurant L'Orchidea in the Caribbean, Chef Bloquel brought his expertise to Toronto, where he now leads the kitchen at Restaurant Lucie.

His contemporary approach to French cuisine, paired with a focus on seasonal ingredients and creative techniques, has redefined Toronto's fine dining scene. With a commitment to innovation and excellence, Chef Bloquel continues to elevate the city’s culinary landscape, crafting dishes that merge tradition with modern flair.
