Satsuki Icewine Omakase with Chef May Ng of Satsuki and Master of Wine, Eugene Mlynczyk
On a fine summer evening in Calgary, Satsuki will open its doors for something truly rare. For one night only, one of the city’s most intimate Japanese dining rooms becomes the stage for a singular performance, a collaboration between Principle Fine Wines and Chef May Ng, in honour of Canada’s most enigmatic wine: Icewine.
Guests will be guided through this delicate journey by none other than Eugene Mlynczyk, one of only 10 Masters of Wine in Canada, who will lead the evening with insight, warmth, and deep reverence for the craft.
Chef May, celebrated for her kaiseki-inspired omakase and precise, poetic flavour expressions, has designed a one-night-only tasting menu. Each course has been thoughtfully created to pair with a selection of Icewine from Principle’s featured portfolio winery, Inniskillin, elevating the pairing from novelty to nuance. From sparkling Icewine to aged vintages, each glass will uncover the unexpected beauty, depth, and gastronomic potential of this Canadian icon. Incorporations of Icewine will be directly in the glass and from a few varietals, infused into the dishes, and as a component to a cocktail - a true representation of Icewine’s uniqueness and versatility.
This is not a traditional pairing. It’s a reimagining. A love letter to terroir, technique, and the thrill of surprise.

Yuzu Hotate oshizushi

Owner and Chef May Ng - Satsuki
Chef May May Ng is the visionary behind Satsuki, Calgary’s intimate Japanese dining experience nestled in Kensington. With a rich background at renowned establishments like Goro & Gun and Lonely Mouth, Chef May has been instrumental in shaping contemporary Japanese cuisine in Calgary. Her culinary journey is deeply rooted in tradition, complemented by her credentials as a certified sake sommelier. At Satsuki, she crafts an omakase menu that marries authentic Japanese techniques with innovative flair, offering guests a personal and seasonal tasting journey. The restaurant's name, "Satsuki," reflects both the Japanese word for May and Chef May's first name, symbolizing a celebration of spring and renewal.

Eugene - Master of Wine
Eugene Mlynczyk MW is one of Canada’s leading wine experts and one of only ten Masters of Wine in the country. With a deep passion for storytelling and a knack for making wine approachable, Eugene has become a trusted voice in the wine world.
